Besan ki barfi recipe. Besan ki barfi is basically gram flour fudge made with besan, sugar and ghee. It is one of those traditional sweets that is loved by everyone including kids.
I am sharing A traditional version of making besan barfi. to prepare barfi this way requires continuous hand work and attention. Give your attention to something else and you may end up with a disastrous version of the barfi. I have given tips and suggestions in the steps itself.

Steps-
- Take a pan.
- Add 1/4th cup ghee.
- 1 cup besan ( gram flour).
- 2 tsp rava ( semolina/sooji).
- Roast on low flame.
- Combine well.
- No lumps.
- Smooth paste.
- Stir continuously.
- Turns aromatic.
- After 25 minutes- golden brown.
- Besan cooked- keep aside.
- Take a pan.
- Add 1/2 cup sugar.
- 1/4th cup water.
- Dissolve sugar.
- Boil for 8 minutes.
- 1 string consistency. *VERY HOT BE CAREFUL.
- Sugar syrup is ready.
- Transfer sugar syrup into cooked besan.
- Stir continuously.
- It thickens.
- Add 1/4th tsp cardamom powder. *FLAME OIL.
- Mix well.
- Transfer in a greased tray.
- Level out.
- Add 2tsp chopped cashew ( kaju).
- Press gently.
- Allow to set for 30 minutes.
- Trim sides.
- Cut square.
